Cupping is a term referred to as a method that assesses and evaluates specialty coffee in a blind fashion by coffee professionals. The process of testing the aroma and taste includes inhaling the scent deeply, slurping a small amount of the coffee, and letting it absorb the tongue.

Coffee after the tasting process is measured and graded by acidity, sweetness, texture, overall flavor, and even the aftertaste.
